Ingredients
  

  • 1 cup oat flour
  • 1/2 cup canned pumpkin purée
  • 1/4 cup xylitol-free peanut butter
  • 1 egg
  • 1/2 cup plain unsweetened yogurt to top

Method
 

  1. Preheat oven to 350°F (175°C); line a muffin tin.
  2. Stir flour, pumpkin, peanut butter and egg into a batter.
  3. Divide among 12 cups and bake 20 minutes.
  4. Cool, then pipe or spoon a little plain yogurt on top.
  5. Serve one as a special treat.

Notes

Freeze unfrosted pupcakes and thaw as needed.
