Ingredients
  

  • 1 cup cooked mashed sweet potato
  • 1/2 cup coconut flour
  • 1 egg
  • 2 tbsp unsweetened shredded coconut

Method
 

  1. Preheat oven to 350°F (175°C); line a baking sheet.
  2. Mix the mashed sweet potato and egg until smooth.
  3. Add coconut flour gradually until a soft dough forms (it firms up as it rests).
  4. Roll into small balls, flatten, and sprinkle with shredded coconut.
  5. Bake 20 minutes until set; cool completely.

Notes

Coconut flour is very absorbent — add it gradually. Grain-free and gentle on tummies.
