Ingredients
  

  • 2 large sweet potatoes
  • 1/4 cup grated low-fat cheese optional

Method
 

  1. Preheat oven to 250°F (120°C) and line two baking sheets with parchment.
  2. Slice the sweet potatoes lengthwise into ¼-inch strips (a mandoline helps).
  3. Arrange in a single layer and sprinkle lightly with cheese, if using.
  4. Bake 3 hours, flipping halfway, until dried and chewy.
  5. Cool completely before serving.

Notes

For chewier results, bake a little longer; for crispier, slice thinner. Cook time is hands-off.
