Adorable single-serve pupcakes made with apple, oat flour and a dollop of yogurt “frosting” — perfect for birthdays.

Ingredients
  

  • 1 cup oat flour
  • 1 cup grated apple cored, no seeds
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 1/2 tsp cinnamon
  • 1/4 cup plain unsweetened yogurt for topping

Method
 

  1. Preheat oven to 350°F (175°C); line a mini-muffin tin.
  2. Mix grated apple, egg, applesauce and cinnamon.
  3. Stir in oat flour until just combined.
  4. Spoon into the tin and bake 20 minutes until set.
  5. Cool fully, then top each with a little plain yogurt.

Notes

Always core the apple and remove every seed. Use xylitol-free yogurt.

Storage & make-ahead

Keep frosted pupcakes refrigerated for up to 3 days, or freeze them un-frosted for up to 2 months and add yogurt before serving.
