Coconut-Pumpkin Frozen Bites
Creamy frozen bites of pumpkin, coconut and yogurt — gentle on tummies and perfect for summer.
Ingredients
Method
- Stir the pumpkin, yogurt, coconut (and coconut oil, if using) together.
- Spoon into a silicone mold or ice-cube tray.
- Sprinkle a little extra coconut on top.
- Freeze at least 4 hours, until solid; serve frozen.
Notes
Introduce coconut gradually — it is high in fat. Use xylitol-free yogurt. Freeze ~4 hours.
