- Preheat oven to 350°F (175°C); line a baking sheet.
- Mix the mashed sweet potato and egg until smooth.
- Add coconut flour gradually until a soft dough forms (it firms up as it rests).
- Roll into small balls, flatten, and sprinkle with shredded coconut.
- Bake 20 minutes until set; cool completely.
