Coconut-Pumpkin Frozen Bites

Creamy frozen bites of pumpkin, coconut and yogurt — gentle on tummies and perfect for summer.

Ingredients
  

  • 1/2 cup pumpkin purée 100% pumpkin
  • 1/2 cup plain unsweetened yogurt
  • 2 tbsp unsweetened shredded coconut
  • 1 tbsp coconut oil optional

Method
 

  1. Stir the pumpkin, yogurt, coconut (and coconut oil, if using) together.
  2. Spoon into a silicone mold or ice-cube tray.
  3. Sprinkle a little extra coconut on top.
  4. Freeze at least 4 hours, until solid; serve frozen.

Notes

Introduce coconut gradually — it is high in fat. Use xylitol-free yogurt. Freeze ~4 hours.
