Method
Preheat oven to 200°F (95°C); line a sheet.
Rinse and slice liver into ¼-inch strips.
Arrange in a single layer.
Bake 2.5–3 hours until dry and firm.
Cool, then cut into small pieces.

Liver is rich — serve sparingly.
